Yes, when you look through the sky you're really looking through water because there is a lot of it in the AIR.
When water gets hot it turns into a gas. That's why we have clouds. Clouds are simply excesses of water vapor in the air that become visible to the human eye. So yes, if you are looking through the clear sky its like looking through clear water. It's not "empty". Just like water is transparent, so is its components which are 2 hydrogen and 1 Oxygen molecules. Air also has other molecules in it besides Oxygen but the deeper the water is the more your sight is limited. The same thing happens with the sky. This has nothing to do with space but rather out atmosphere. The dirtier it is the harder it is to see through it. That's why you can't see as many stars in a polluted city. Once you leave the area under a heavily polluted sky, you will see many many more stars and it's really beautiful.
If you go by what you can see without understanding these how even your view can change just by moving to another place, then you are setting yourself up to look foolish to those who have seen the world and sky from different places on earth. That's why a lot of these flat-earth people have literally never left the United States.
