You will need to get: 1 Pack each button & baby bella mushrooms 2 Avocados 1 1/2 large sweet onion 1 medium green bell pepper 1 medium red bell pepper 4 medium cloves of garlic 1 palm full each of cumin, oregano, thyme(a little less than a palm full) 1 palm full of fresh cilantro 1 lemon 1 sprinkle of red pepper flakes 1 large bay leaf 1 good splash of red wine vinegar 1 pack of tortillas EVOO, salt and pepper, hot sauce, salsa, monterey jack cheese, and lettuce. You will need to do: Clean & slice your mushrooms. Dice your onions and bell peppers, mince your garlic and finely chop your cilantro. Shred your lettuce & cheese. Heat a skillet on medium high. When hot add some olive oil, enough to cook your mushrooms. When the oil is hot, add the mushrooms and cook until good and tender and sorta caramelized. Lightly salt & pepper. At the same time heat another skillet. When hot add about two turns around the pan of Olive Oil. You want enough to saute your onions and bell peppers. When the oil is warm, add 1/2 of your onions, the bell peppers and the bay leaf. Cook until good and tender. Once tender add the herbs & spices, garlic, cilantro, red pepper flakes, splash of vinegar and lightly salt and pepper. Cook until the garlic just starts to turn golden. About 4 minutes or less. Set aside. Now peel & slice your avocados, drizzle them with lemon juice, a light salt & pepper, & a few shakes of hot sauce. Now build your tacos. Take a warm soft tortilla and layer with some of the mushrooms, the bell pepper & onion mixture, salsa, cheese, a few avocados, some lettuce, and diced onion. Roll up the tortilla and munch. Yummy!
