Everything organic please!! tofu vegetarian sausages plum tomatoes garlic fresh thyme fresh sage extra virgin olive oil bell pepper spanish onion celery dry field peas sea salt white pepper dried red chile okra japanese soy sauce coconut oil for frying dash (white)sherry or granache soak the field peas 30 hours and then cook till tender, add salt pepper to taste, and a dash of sherry while cooking place tofu in a bag with garlic, some fresh sage , cooking sherry, and japanes soy sauce, but not too much and let set overnight Cut the tofu into 1/2 inch strips, align sideways on a double thickness of paper towel, and with another 3 layers on top, press gently but steadily, until most of the moisture is out place the coconut oil in frying pan, melt and set high heat for frying, add the tofu strips and fry until light golden, then set aside. Make your Etoufe' saute' chopped garlic, onion, celery, green pepper cook plum tomatoes and okra, with sliced onion and garlic, and a healthy amount of olive oil, until stewie looking. blend in the Etoufe' add the dried chile add the field peas and some of the pot liqour, then the thyme , sage, and tofu and simmer brown the sausage in the oven and slice into 1/4 inch slices, when done, and add let simmer no longer then 5 minute then serve on a wild rice blend or brown rice cooked till fluffy.
