this is like curried goat but a vegan version of it Curried Goatee 1/4 cup vegetable oil 1 large onion, thinly sliced 3 cups veggie mutton (you can get this in most Asian Markets) 2 potatoes peeled and cut into large 1 inch chunks 2 carrots cut coarsely into 2 pieces 2 stalks of celery cut roughly into 2 pieces 1 1/2 Tbs. curry powder 1 tsp salt Sprig fresh thyme Dash allspice 1/4 cup ketchup 1/4 cup red wine 2 cups water 1.Sauté onions in vegetable oil 2.Add veggie mutton and brown 3.Add all other ingredients, scraping side of pan 4.Cook, uncovered, on medium/low heat for 30 minutes. Do not let boil. 5.Serve over brown rice or with coconut rice and plantains. this is a very yummy dish!
