Vegetable - Fruit - Recipe : Spinach Enchiladas

    This recipe is great for those who love mexican and quick meals!

    INGREDIENTS

    1 1/2 bags of frozen spinach (fresh comes out a little stringy but it still works)
    1 8oz box of cream cheese
    1 bag of shredded cheese
    1 large can enchilada sauce
    1 small jar hot Pace picante sauce
    10 tortillas

    RECIPE

    Sautee spinach in a few table spoons of olive oil. After spinach is tender add cream cheese and season to your individual taste (I normally sautee onions and garlic to add with my seasonings). Your spinach mixture is now done.

    Mix enchilada sauce and picante sauce in a small bowl.

    Now your ready to put them together! Spoon an ample amount of spinach mixture into tortilla, sprinkle with cheese, drizzle with sauce mixture, roll and place in casserole dish. Continue this pattern until all tortillas are complete.

    Pour remaining sauce mixture over enchiladas, sprinkle remaining cheese and bake for 30 minutes at 400 degerees.

    And you're done!!!!!!

    Hi Muslimgirl...

    Thank you for this recipe, I love spinach and I plan to make this. Only I don't enjoy hot and spicy foods, so I'll be modifying the hot pace picante sauce to mild.:)

    Do you have any other veggie dishes to share?

    I have lots of veggie recipes. Tell me what kind of vegetables you like and I'll come up with something.

    I grow into loving pretty much all veggies. However my favorites are,

    Spinach
    Broccoli
    Carrots
    Cauliflower
    Cabbage
    All bell peppers
    and
    Mushrooms
    :)

    Today I actually cooked and ate fresh beets. I loved them! Who would have thought... heck as a child I sat at the dinner table crying because I didn't want to eat my beets. :lol: Anywayz...

    mmmmmmmmmm SOUNDS SO GOOD

    I love spanish food too.(I think it's the rice and beans)

    Now making this dish on my own term i would need to sub the cream cheese to Better Than Cream Cheese cream cheese alternative.

    When I cook for myself, I make sure I do not use milk ingredients...only here where I almost have no choice, I intake dairy....smh

    This sounds Like a really good AND REALLY HEALTHY recipe. Thank you sister...I can not wait!

    I had Spinach Enchiladas for dinner tonight and they were absolutely DELICIOUS!
    I plan to make them again soon and add portabella mushrooms to the mix.

    YOUR MOM MUST KNOW MINES, CUZ FOR ME, NOT ONLY WAS IT THE BEETS I REFUSED TO EAT, IT WAS ALSO THE LIVER AND ONIONS!!

    I LOVE SPINACH TO DEATH, I WILL ALSO BE TRYING THIS RECIPE, BUT I WILL BE ADDING SOME MUSHROOMS TO IT.. SOUNDS VERY GOOD!

    Hey thanks for adding another reciepe to my quick meal repetoire (sp). The Kids and I love mexican and always looking for ways for them to eat their vegies I will try this mext week.
