2 cups flour 2 T. sugar 2 well beaten eggs 2 T.butter, melted 2 stiffly beaten egg whites 4. t. baking powder 1 t. salt 2 cups milk 1 cup grated or chopped apple (grated is better) finely chopped pecan pieces Cream and Honey Sauce 2/3 cup light honey 1/4 t. cinnamon 1/8 t. cloves 1/8 t. nutmeg 2/3 cup heavy cream or evaporated milk 1/8 t. all spice Mix and serve. Mix dry ingredients together. Combine egg yolks and milk. Pour into dry ingredients; stir well. Stir in butter and apple. Fold in egg whites. Let batter stand for a few minutes. Bake on a hot griddle using 1/3 cup batter for each. Dot with butter and top with pecan pieces and cream and honey sauce.
