I'm trying to build a collection of delicious vegan/raw food recipes...other than your common salads, of course. Can anyone share any? Thanks.

    Here's one for ya...

    Homemade Veggie Delight Submarine/Hoagie/Hero/Grinder

1 HALF A CUP OF SHREDDED LETTUCE

1 HALF A CUP OF ALPHALFA SPROUTS

    6 THIN SLICES OF TOMATO

    6 THIN SLICES OF CUCCUMBER

1 THIN SLICE OF WHITE ONION

3 SLICES OF VEGGIE OR VEGAN APPROVED CHEESE (FAVORITE FLAVOR)

3 THICK SLICES OF PORTOBELLO MUSHROOMS (OPTIONAL)

    2 TSPS OF GUACAMOLE'

1 TSP OF GRAPE SEED OR VEGAN APPROVED MAYONAISE

    1 8" MULTIGRAIN SUB ROLL

NOTE: INGREDIENTS CAN BE REPLACED OR ADJUST TO TASTE.

SPLIT THE BREAD IN HALF DOWN THE MIDDLE LONGWAYS. SPREAD THE MAYONAISE AND GUACAMOLE' ON EACH SLICE OF THE BREAD. ADD THE VEGGIES AND CHEESE AND VIOLA. THIS MAKES A HIGH FIBRE, LOW FAT, NO CHOLESTEROL, LOW CALORIE LUNCH THAT'S SIMPLE, QUICK AND CONVENIENT.
