This is a great tomato sauce that you can use on pasta, roasted eggplant, as a pizza sauce, meat loaf topper, whatever. It is my go to sauce, especially when I need to be quick. You will need to get: 1/4 slice of a medium onion 2 medium garlic cloves half a palm of dried oregano and dried basil, and just a little less dried thyme salt and pepper and sugar to taste 1 14 1/2 0z can of stewed tomatoes. good extra virgin olive oil You will need to do: small dice your onion and mince your garlic. Puree your tomatos. Heat a small sauce pan on medium heat. When warm add a couple turns around the pan of your good extra virgin olive oil. Add your diced onion and cook until just softened. Add the garlic and just heat through. You do not want your garlic to change color, just heat through. Turn down the temp and add your pureed tomatos, the herbs, salt and pepper to taste and sugar to taste for a hint of sweetness if needed. Mix well and cook for about five minutes and its done. Turn off the heat. Yummy! For a quick meal, toss this sauce with some spaghetti pasta, a few of your favorite olives chopped and a sprinkle of your favorite cheese. Yum!
