Pecan coffee cookies You will need to get: 1/2 stick (1/4 cup) unsalted butter, softened 1/4 cup sugar 1/8 teaspoon salt 1 large egg 1/2 teaspoon vanilla extract 1/4 cup plus 1 teaspoon all-purpose flour 1/4 cup crushed pecans. More if you like. You will need to do: Preheat oven to 350 degrees F. Beat butter, sugar, and salt with an electric mixer at moderately high speed until pale and fluffy, about 2 minutes.
