(2 servings) 2 cups diced cooked chicken 3/4 c. seedless grapes, each cut in half 1/4 c. chopped celery 1/4 c. sliced toasted almonds 2 Tbls. small raisins 3 Tbls. regular or low-fat salad dressing 2 teas. mango chutney, regular or hot 1 - 2 teas. curry powder, regular or hot Salt Black pepper 2 ripe tomatoes, thinly sliced Combine chicken, grapes, celery, almonds, raisins, salad dressing, chutney and curry powder. Taste, adding more curry powder to taste. Season w/ salt and pepper. Place the tomato slices in a circle on a plate, top w/ the chicken mixture. Serve.
