Meat Recipe : Corn and Bacon Hotpot

8 oz. thickly sliced bacon
2 onions, sliced
1 clove garlic, crushed
14 ( 1/2 oz.) can tomatoes
4 small potatoes, sliced
freshly ground pepper
4 fresh or frozen ears of corn

In a heavy saucepan cook bacon until crisp. Drain on paper towels, reserve drippings. Add onions and garlic to drippings and cook until tender. Stir in undrained tomatoes, potatoes, pepper and bacon. Cover and simmer for 15 minutes.
Cut corn into 1 inch pieces. Add vegetable mixture, adding vegetable broth or water, if necessary. Cover; cook 10 minutes or until the corn is tender.

Serves 4
Prep time: 20 minutes
Cooking time: 25 minutes
