BTW, I have never understood why Soul Food Restaurants don't prepare M&C like it's done at home... Ladies in my family always used at least 2 eggs and some carnation beaten to a cream(seasoned with salt and pepper, of course) to pour into them cracks with the elbows, butter and Cheese... In the Soul Joints I've been in here in NYC, I am puzzled by this no frills macaroni and cheese only mentality... Cheap negroes go outta bidness...

In my years culinary training (aka experimenting with food) I've found using sharp Cheddar cheese makes the mac-n-cheez too oily, add too many eggs and you'll have scrambled eggs and mac-n-cheez and cream or milk sweetens the dish taking away twang of the cheese. I use the ingredients I do to create an effect when preparing this dish. If you are a cheese lover the purpose of the sour cream is to evenly melt and blend the cheeses. This gives the dish a smoother and creamier texture. I only use one egg to give the dish the firmness without making scrambled egg yolks and whites. For the twang without the oil I use Colby cheese instead of sharp Cheddar cheese and I use the Monterrey Jack for it's mildness without dimmishing it's cheesiness. So there is a science to making a good mac-n-cheez. If you don't like sour cream then use melted cream cheese and a little extra Colby cheese and a little less Monterrey Jack cheese. Like I always says when I cook "If you dont like it, throw it in the trash". None of my dish have ever hit the trash can yet.....

I'm interested in making this brotha Rad but I don't know if that veggie cheese will work. Will that stuff actually melt? And what can I use in lieu of an egg?
