This is delicious, nutritious, fun and easy
Ingredients:
ten boneless, skinless chicken thighs (about $5)
1 package salad mix (dark greens like baby spinach, romaine, carrots, corn etc - they are fresh but hassle free)
1/2 package fresh shredded carrots
1/3 cup chopped onions (you can buy them fresh but already chopped. Hey, I don't like crying)
3 tbsp minced garlic
1 fistfull dark brown sugar
1/3 cup omega 3 buttery spread
couple tbsp of guacamole
a handful of croutons
Preparation:
Preheat oven to 375
Fill sink with a little soapy warm water so you can wash your hands often to avoid salmonella from handling raw chicken.
Chicken:
put buttery spread and sugar together in medium sized bowl. microwave for thirty seconds to melt spread. Stir together.
tenderize chicken with the prongs of a fork punching it on both sides. place it in the bowl with the spread and sugar and swish it around so it's all coated.
Place in deep baking dish (glass or corning ware). Pour any remaining spread on top
Bake on 375 for an hour and forty five minutes
Salad:

when chicken is ready Pour on top. mix together real good.
Serve with guacamole and croutons
