This is my own special dish. It is a faily light dish despite it's many charactaristics

1 pkg Firm tofu sliced into 2-2'1/2 inch squares(you can use 1/2 pack)
3/4 whole eggplant, cubed
2 1 green banana/ plaintain, sliced
6-8 peapods sliced in half short ways (any kind)
1/2 large onion, diced
1 celery stalk diced
1 1/2 cup sliced carrots
2 cups wheat bread crumbs or flour
1 1/2 cup mushrooms, chopped
1 clove garlic minced
Any delicious jar of gourmet blend chunky tomato sauce
Your favorite spices
salt
pepper
oil
Magarine(optional)

*you are free to choose your type of peapod due to the fact, I have no clue what mine was. It looked like baby lima's

You will need at least two frying pans. One needs to be at least two and a half inches deep.

Prepare oil to fry tofu.(If one pan is deeper, use the more shallow one for this)

You may make a batter with your bread crumbs/flour.

1. Season tofu.

2. Place tofu on bed of bread crumbs and press down.(be firm but gentle due to tofu fragile condition)
turn to other side and repeat.

3. Then place in hot oil to fry.

4. Heat oil in second pan to prepare stir fry. (you can do this earlyif you prepare everything before hand...but I mentioned this second so you do not over heat a pan)

5. Place diced onions, celery, and garlic into hot stir-fry pan(you can dice up more if you like....it makes a really good flavor)

Let cook on medium about 2 mins, stirring occasionally.

6. Next add in other vegetable ingredients (except plantain) using a ripple effect, your choice of order. Letting the previous vegetable cook for at least 30 seconds.

Once you have all your vegetables into the stir fry cook to your desire.

7. Next pour in your tomato blend and stir. Add in some water, chunky tomato is very thick. Let cook on medium-low stirring occasionally.

8. Place tofu on plate draining oil and proceed to pan fry your plantain...however you like(w/ oil, margarine, water...)

9. Scoop tomato stir-fry onto plate, place tofu on top. place plantains as side dish and ENJOY.


* you can purchase veggy cheeses to top with as well...but if you are keeping it vegan...you will not do this as a result of lactose in the Veggy brand cheeses.
You may place on a bed of wheat noodles or even on top of baked plantains
the noodle dish was delicious as well.
I also added pigeon peas and corn and it also was delicious althogh be careful with your amount of pigeon peas.
