This recipe is great for those who love mexican and quick meals!
INGREDIENTS
1 1/2 bags of frozen spinach (fresh comes out a little stringy but it still works)
1 8oz box of cream cheese
1 bag of shredded cheese
1 large can enchilada sauce
1 small jar hot Pace picante sauce
10 tortillas
RECIPE
Sautee spinach in a few table spoons of olive oil. After spinach is tender add cream cheese and season to your individual taste (I normally sautee onions and garlic to add with my seasonings). Your spinach mixture is now done.
Mix enchilada sauce and picante sauce in a small bowl.
Now your ready to put them together! Spoon an ample amount of spinach mixture into tortilla, sprinkle with cheese, drizzle with sauce mixture, roll and place in casserole dish. Continue this pattern until all tortillas are complete.
Pour remaining sauce mixture over enchiladas, sprinkle remaining cheese and bake for 30 minutes at 400 degerees.
And you're done!!!!!!
