Here's a yummy recipe for dairy and sugar free banana "pudding".
Makes 1 serving
Ingredients
1 serving Oatmeal
1 ripe banana, prepared (see below)
1/4 c Vanilla Rice Milk
cinnamon, to taste (optional)
Method
2 days ahead, peel, cut and freeze ripe banana in airtight container overnight.
Take banana out of freezer and place in refrigerator for at least 18 hours or until brown liquid forms in container. (This liquid is a combination of sugars and ice crystals.)
Cook oatmeal to a thick consistency. Mix with banana and liquid. Add Rice milk to slightly thin. Mix. Add cinnamon and stir. Enjoy!
