Cornbread "dairy free"
Pre heat oven to 450

Ingredients
3/4 cups cornmeal
1/4 cup wheat flour (or you can do 1/2 cornmeal and half flour)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 cup (soy or rice) milk
1 tablespoon vinegar
1/2 cup each of sweet yellow corn, chopped red bell peppers, chopped green peppers
1/2 cup of a liquid sweetener (i use either honey or maple syrup)
3 tablespoons oil or melted soy margarine (I use Earth Balance margarine)
Egg Replacer equivalent to 1 egg

Procedure - In a separate bowl, combine the milk and the vinegar, stir well, then add the other liquid ingredients. Add dry items and mix well. Pour into an oiled and floured 9X9 inch baking pan and bake for 20 minutes.
Before removing, do a toothpick check to make sure the center is fully cooked.

Cool and Enjoy
