2 teas. Bacon drippings
1 1/2 cup chopped cracklings or crisp fried bacon
1 1/2 cup cornmeal
3 Tbls. self-rising flour
2 cups buttermilk
1 egg beaten
Preheat oven to 450. Put bacon drippings into 10" heavy or iron skillet. Place in oven to heat.
Mix cracklings or bacon with dry ingredients. Combine buttermilk and egg. Add to dry ingredients, mixing just enough to make a smooth batter, pour into hot, greased skillet. Bake about 25 minutes or until done. Serves about 8.
