2 teas. Bacon drippings
1 1/2 cup chopped cracklings or crisp fried bacon
1 1/2 cup cornmeal
3 Tbls. self-rising flour
2 cups buttermilk
1 egg beaten

Preheat oven to 450. Put bacon drippings into 10" heavy or iron skillet. Place in oven to heat.
Mix cracklings or bacon with dry ingredients. Combine buttermilk and egg. Add to dry ingredients, mixing just enough to make a smooth batter, pour into hot, greased skillet. Bake about 25 minutes or until done. Serves about 8.

The crisp brown skin with a crisp layer of fat that is created when pork skins are cooked. Pork crackling or Chicharon as it is also known, is a popular food in the southern U.S., it is commonly served as a snack. Cracking is prepared by boiling the pork rind in water seasoned with a variety of spices. Another method of cooking is to deep-fry the rind and season to taste.
