SALMON CAKES

What you need

Can salmon (bones removed)
Green bell peppers chopped
Onion, finely chopped
Yellow cornmeal
all-purpose flour
Oil for frying
Salt and pepper
Minced garlic (optional)

Heat oil
Mix salmon, bell peppers, and onion then season
Mix cornmeal and flour and cover salmon patties with mixture
Drop in oil until golden brown done.

FRIED TOMATOES

What you need

Buttermilk
eggs
sugar (cuts the acid)
green tomatoes
cornmeal (yellow or white what you prefer)
all-purpose flour
Pepper and salt (optional)
Garlic power(optional)

In a bowl buttermilk, egg, and sugar place tomato slices in mixture. In another bowl cornmeal, flour, and seasonings. Heat oil. Drain the tomatoes and place in the cornmeal mixture fully. Cook until golden brown.

I use virgin olive oil it brings the taste of the food out better. And it's to be healthier. I also use garlic as a seasoning, more then I use salt.

Angel, this recipe sounds HEAVENLY....ummmmm, gots brotha salivating...(smile!) Fish and veggies and grains...you got me hummin' anytime you put that combo on the table...
