2 Tbls. oil
2 med. onions, chopped
2 cloves garlic, crushed
1 lb. ground beef
8 oz. small mushrooms, chopped
2 Tbls. chopped fresh basil
16 oz. can tomatoes with their liquid, crushed
1/2 cup tomato paste
1 Tbls. chopped fresh oregano
4 cups water
1 lb. dried fettuccine
Heat the oil in a heavy-bottom pan, add the onion and stir over medium heat until the onion is soft. Add garlic, stir for 1 minute. Add the ground beef and cook over high heat for 5 minutes until the meat is well browned and all the liquid has evaporated. Use a fork to break up any lumps of beef as it cooks.
Add the mushrooms, basil, crushed tomatoes with liquid, tomatoe paste, oregano and water. Bring to a boil, then reduce heat to a simmer. Cook, uncovered for 1 hour 30 minutes, or until the sauce has reduced and thickened.
Bring a large pan of water to the boil. Add fettuccine and cook until just tender. Serve with meat sauce.
