View Full Version : Chit Chat : Healthy Southern Style Vegetables...
Akilah 04-22-2005, 08:40 PM For healthier versions of Southern style vegetables and beans/peas such as collard/turnip/mustard/kale/cabbage and black eye, crowder peas, field peas w/ snaps etc... you can substitute smoked turkey for the fattier cuts of pork hamhocks, neckbones, and fat back as a seasoning agent along with all your usual seasoning ingredients such as onion, hot pepper, green pepper, vinegar etc...
For those who are vegan : You can use organic vegetable broth along with plenty of onion, garlic, herbs, hot pepper/cracked dried red pepper, vinegar, lemon juice , black pepper and a touch of olive or safflower oil to create a very delicious but much healthier pot of homestyle veggies.
And hey, what would a mess of greens or beans be without a pan of some good ol' hot cornbread ??? It can be made with stone ground cornmeal, skim evaporated milk or soy milk, egg whites or egg beaters, canola or safflower oil etc... for a lighter and healthier yet still extremely tasty side bar to your savory vegetables.
