Saucy Orange Roughy Fillets..Yummy
1 Tablespoon Vegetable Oil
1 Medium Onion chopped
1 Cup Tomato Juice
2 Teaspoons Lemon Juice
1/2 Teaspoon salt
1/4 Teaspoon Red Pepper Sauce
1/4 Teaspoon Worcester sauce
2 Tablespoons chopped fresh parsley
1/2 Cup Water
6 4-7 oz orange roughy fillets
In large skillet, saute onion in oil over low heat for 10 minutes. Stir in remaining ingredients with fish and simmer for 5 minutes. Place fish in skillet, cover and simmer 10 more minutes. Serve with sauce spooned over fish. Serves Six.
