:)

Is there a way to insure that the shells of boiled eggs will always come off smoothly ... without tearing the egg up?!

Sometimes they slip right off and sometimes I need tweezers ... :lol: ... what am I doing wrong?

Are these "old" eggs or sump'n ...

LOL!, i thought i was the only one having this problem. sometimes i figured it was because i wasn't waiting for the egg to cool before trying to separate it from the shell.

how can you tell when eggs are too old?

the fresher the egg, the harder it is to peel...and make sure you get the skin as well as the shell when you first peel it...and I was always told to only tap it gently with the back side of the spoon to crack the shell....

if you put an egg into a glass of water and it floats to the top...it is too old..

l have a question about eggs.
that "black dot" in the yoke part- is that the eye or somethin'.?
(or maybe a bad egg :confused:)

j'hiah...as much as i'd like to be one...I can't be an eggologist because I don't know the answer to your question....

why is that little black dot there..I haven't got a clue:x:

I do know though that if you roll the egg between your hands after tapping the shell, it will make it peel easier..
and
running hard-boiled eggs under cold water stops them from getting that dark green tinge around the outside of the yoke...

what black dot? i do wonder what the white part between the yolk and whites? someone once told me they thought it was the sperm.

next time you all crack an egg, look at the yoke part all the way around, you're sure to see a black dot, like an eye or somethin'..

i don't have the black spot. i only have the little slimy white thingy that connects to the yolk.

the part between the yolk and the white of an egg is not sperm (or an embryo) it's a special protein called CHALAZAE, which is there to act as a shock absorber to stop the yolk from breaking..

I cracked open every egg I had in the house, I stole every egg I could find off my neighbours, I raided every chicken coop I saw and I cracked every single egg open and the only black dot I saw was the one in my own eyes from cracking open and looking at all those **** eggs:D

are you positive the black dot was IN the egg...

l confess though it wasn't my pupil reflecting, it was a black dot or something that looked like a pupil- just like you would see in an human embryo..

blood spots in an egg are red as a rule not black (you see a lot of eggs like these when you have your own hens)....so unless J'hiah is seeing the wrong colour, then he must be talking about something else...:x:

I had a look at both your links and there sure is a lot of information on the humble little egg on there....

thanks for that Kitana. i never thought it was sperm but couldn't explain it to the woman either. in fact, i started taking the little "shock absorber" out of my eggs. i had never noticed or paid much attention to the little white slimy part UNTIL the woman put it in my mind.

and i glad the black spot is not staandard. i was about to think my eggs or defected. LOL!

Kitana, i hope you made omelets and/or quiche, french toast with all those broken eggs.

I only read the first page of this thread, so I dont know if the answer to this question has been posted.

Destee, it's hard to peel because it's yet cooking in that shell while your attempting to peel it. You need to give what we cooks call a 'stop bath'. In simple terms, stop the cooking process. It's almost like cooking bacon. If you dont remove the bacon just before it's done, because it's yet cooking, it may burn while on the plate. So here's the best and most simple way to solve this.

After you've boiled them, poor out the hot water, then soak them in cold water for a couple of minutes, then they'll be easy to peel. If they're not, then you didn't soak them long enough. The egg should be warm or almost cold when you peel it. Also, buying fresh eggs will help with this. Dont keep eggs any longer than a week. But most people do anyway, because they dont notice any problems in their food. But I do. Keeping eggs too long can cause all sorts of problems while cooking. You should also make certain you're cooking that egg long enough.

Kitana explained how cold water solves the tinge problem (and she's right). It also solves the hard to peel problem, among other things.

Thanks Kebah ... :) ... I still had trouble with the last eggs I had. Haven't bought any for awhile, call myself giving up dairy products ... easing into vegetarianism ... but i do love eggs so if i break down and buy some I'll be trying the methods provided in this thread. Lots of good info for sure. I didn't realize they were old in a week! Gosh ... I know I've kept and used eggs for much longer than that. What kind of problems do you notice by eating old eggs? I've probably had some of those problems but never knew to blame it on that old egg!
